16 Green asparagus medium
2 egg yolks
Soy sauce (light preferably in salt)
100g melted clarified butter (130g raw butter)
1 fresh salmon egg box
Chervil soaked in ice water
Peel the asparagus and cook in boiling water for 3 minutes
