Recipe : Soup of red fruits, red wine

Chef’s recipe soup of red fruits.

Type: Dessert;

For 4 persons;

Ingredients : 

A bottle of red wine heady
A stick of cinnamon
150g sugar
8 coriander seeds crushed
4 crushed black peppercorns
A clove
1 orange zest
1 fresh orange
¼ lemon juice
1 bunch mint

An assortment of red fruits, depending on what you like

 

Preparation :
In a saucepan, heat the wine with spices and sugar.
Boil, blaze and let reduce by a third. When you remove the heat of the wine, add the sprig of mint and let it steep until completely cooled. Then keep in fridge.
Once cool, pass the syrup in Chinese utensil.
Divide the berries on plates and pour a ladle of syrup over the fruit. Add the cut julienned mint.
