Type: Starter;

For 4 persons;

 

Simply recipe of steamed porcini mushroom with lime

Ingredients:
2 egg yolks
1 lime
4 porcini mushroom (250g per person)
Reduced salt soy sauce
Clarified butter
Water
Salt pepper
Simply chopped parsley

Preparation:
Wash the mushrooms and pat

Season fungi, cook with steam, in a couscoussière, wrapped in plastic wrap (or a minute in the microwave in a shallow dish covered with plastic wrap).

Sabayon: in a bowl whisk two egg yolks, juice of one lime, a tablespoon soy, water. Add the melted clarified butter

Dressage:
Put sauce on the top mushrooms and mustard sprouts sheet above.
